I’ve had frozen rhubarb in my freezer from my Mom’s garden for a while now and wanted to use some up. I also threw peaches from the Leslieville Farmer’s Market in my freezer when I went home to Ottawa for the Labour Day long weekend so they wouldn’t go bad. I had no idea what to make with the rhubarb & peaches but a crumble is always a good plan.
I went on one of my favourite recipe blogs Oh She Glows and found a recipe for vegan & flourless strawberry & apple breakfast crisp. I love how simple her recipes are and knew I could easily adapt this for my fruit.
I had my first serving with plain coconut yogurt on top. Perfect post carb intake after leg day on Monday!
