Ingredients
1 cup whole wheat flour
1 cup spelt flour
1/2 cup sucanat
2 tsp baking powder
1/2 tsp baking soda
1 tsp ground ginger
1/4 tsp ground cloves
1/2 tsp sea salt
1 large egg
1/4 cup coconut oil
1 cup plain Greek yogurt
1/4 cup vanilla almond milk
1 tsp pure vanilla extract
1 large mango, cut in chunks
1/4 cup unsweetened golden raisins
2 tbsp unsweetened shredded coconut
Directions:
Heat Oven to 375
Line a muffin tin with medium papers
In a large bowl whisk, flour, sucanat, baking powder and soda, ginger, cloves and salt.
In another large bowl whisk, egg. Add oil, yogurt, milk, and vanilla.
Combine wet and dry ingredients
Fold in mango and raisins
Spoon batter into muffin cups and sprinkle with coconut.
Bake 16-18 mins
Cool in pan for 5 and transfer to cooling rack
