I got my meal prep Sunday vibe on this week! It was epic. I have to say epic when the meals for the week truly excite me! My convenience trick (which seems to amaze people on Instagram) is my smoothie baggy trick. I prep my smoothie ingredients in individual bags for each day so all I have to do is dump into the Vitamix, add coconut water & ground flax seeds and blend! This week’s ingredients include: handful of baby spinach, 1/2 an apple, 1/5 pear, 1/5 of a beet, 1/5 of a cucumber, coconut water and ground flax seed.
I love me some red meat. This week I purchased grass fed beef from the Healthy Butcher on Queen street!
And the fan favourite! Crock pot chicken! I use Mrs. Dash Montreal Chicken & the lemon/garlic seasoning with organic chicken broth. The 2nd picture below is what it looks like shredded.
I bought Joyous Health’s book this weekend at the yoga show and couldn’t wait to dive in and try some recipes! First up was homemade Turkey Burgers. What truly made these amazing were the sundried tomatoes, parsley and red pepper flakes amongst other goodness ingredients. I made a batch and had 2 for dinner with a serving of quinoa.
The second recipe I dove into was the Almond Power Muffin recipe for breakfasts this week. I heated one up Monday morning for 20s in the microwave to eat on my way to the gym and it was a whole bundle of deliciousness.
And last but not least. I soaked a cup of almonds overnight so I could pump out fresh almond milk in the morning and prepped a few containers of overnight oats so I can just add almond milk the night before to soak overnight. The ingredients were 1/3 cup of oats, a handful of chia seeds, hemp hearts, walnuts and pumpkin seeds. I bought fresh figs to cut up & top the morning off but totally forgot in my Monday morning container.
Not pictured in the blog is the big bundle of kale that I washed and cut up. The snap peas I’ll eat with chicken or steak & guacamole & blue corn flax tortillas that I’ll have for snacks.
