This Sunday I food prepped an amazing new breakfast recipe that I brought to work with me.
Winter Quinoa Bowl
1/4 cup of cooked red/black quinoa (you can use any colour)
1 Pear chopped up
Handful of walnuts
1 Tbsp of homemade vanilla almond milk
Then this morning I picked up an Americano at Starbucks and they had a $2 breakfast deal on so I grabbed a perfect oatmeal with just the nuts and mixed it in with my Quinoa Boal. Sooooo delicious.
I also attempted a carrot & lentil soup! Even though it’s not on my meal plan for the week I have something just in case.
Carrot & Lentil Soup
4 Cups of Veggie Broth
1/2 Cup of Red & Green Lentils
1 Cup of Carrots
I cooked everything for about 30 mins on the stove top. Added in a dash of cumin, curry & chili and then Vitamixed it!
