My parents got me my waffle iron for Christmas which was very exciting!! My holiday fitness wish list at it’s best! My mom came down last weekend for a Mom & Daughter weekend and brought all the xmas presents that were too big for me to cart home on the train. So of course our first morning of the weekend was my first attempt at protein waffles! It didn’t go so well…
So this week has been an experiment in protein waffles. I won’t even post recipes for Attempt #1 & #2 because they failed. 1 wasn’t that bad but the waffle was really light and almost crispy. Attempt #2 well…. if you follow me on Instagram you saw this happen 🙁


Attempt #3 – Good but very coconut floury
Adapted from The Purely Twins – Coconut Flour Waffles
I used…
2 Tbsp Coconut Flour
2 Whole Eggs
1 Heaping Tbsp Homemade Vanilla Almond Milk
Dash of Pumpkin Pie Spice
(Their recipe calls for Coconut Milk & Stevia which I didn’t have on hand so I used almond milk instead and just opted not to sweeten)

Attempt #4 – My Favourite!
1/2 Cup of Oats
3/4 Scoop Magnum Quattro Vanilla
2 Tbsp Ground Flaxseed
1/2 Cup Egg Whites
Dash of Pumpkin Pie Spice
1 Tbsp Homemade Vanilla Almond Milk
I blend using my small magic bullet container so I can pour directly into the waffle iron.
