I have been craving pizza for a while now. Since treating myself is not an option as I heal my gut, so that my body can thrive while living with MS, I wanted to figure out how to make a delicious and healthy pizza option that made me drool. To live with MS in the best possible way I have chosen to be gluten, dairy and nightshade vegetable free. This really complicates wanting pizza because I can’t have the crust, the cheese topping or tomato sauce.
So I started my search for alternative options and found the following replacements.
Cauliflower Crust > Normal Crust
Ingredients:
- 1 head cauliflower
- 1 tsp dried oregano
- 1 tsp dried basil
- 1tsp pink sea salt
- 1 Large egg
- 1 Tblsp coconut oil
Maniocheese > Cheese – I bought this box at a vegan food festival in 2014 and I’ve been searching high and low online to find out where to buy but apparently it’s imported from Brazil and I can’t find a source currently for it. There are 2 bags inside the box so I’m going to really savour the second one when I make this pizza again.
Homemade Pesto instead of Tomato Sauce. Tomatoes are a nightshade vegetable and can contribute to leaky gut symptoms so I’ve cut them out of my diet as I heal my digestion system. I found this recipe on Auto-Immune Paleo
Ingredients:
- 2 cups fresh basil
- 2 Tbls fresh oregano
- 1/3 cup organic unsweetened shredded coconut (didn’t have any so this was omitted)
- 1 Tbls fresh lemon juice
- Zest of 1 medium lemon
- ¼ cup olive oil
- pinch salt
- 1 clove chopped garlic (optional)
Blend in Vitamix
Directions:
Steam cauliflower and mash. Add spices and egg and mix. Lay out on parchment paper covered in coconut oil. Bake at 425 for 20 mins. Add toppings (I used mushrooms, black olives and prosciutto) and bake at 15-20 mins at 425 to 400F.
