Food Prep Sunday – Bean Burgers, Stuffed Mushrooms & Turkey Muffins

I’m going to start a regular feature on my blog called Food Prep Sunday. Where I’ll feature three things that I chose to cook during my weekly meal prep time each Sunday afternoon or evening.

 

Bean Burgers

1 Cup of Black Eyed Beans (I had them leftover from a salad last week)

1/4 Cup of Ground Flax Seeds

3 Baby Carrots, Grated

2 Mushrooms, Diced

1 Tbsp Egg Whites

Dash of Chili Powder, Paprika, Cumin, Black Pepper

 

Mix in a bowl, form into patties and grill in a frying pan on both sides. I cook each side about 5-7 mins.

I’m packing bean burgers with ground turkey & asparagus for the week.

 

Stuffed Portobello Mushrooms

I am not going to even claim that I made these. I picked these up at the butcher section of my Loblaws. But it’s a great way to get veggies and protein in. I’m trying to keep a bit of red meat in my diet to ensure my iron stores stay consistent.

Turkey Muffins

This recipe I have used since I started on my fitness journey. You can find it on her bodybuilding.com site.

I adapt it based on what’s in my fridge but the basics usually remain the same.
