Lentil & Sweet Potato Stew – found this recipe on cleaneatingmag.com
Ingredients:
1 Sweet Potato
2 Cups of Red & Green Lentils
4 Cups of Veggie Stock
Handful of Carrots (chopped)
Handful of Orange Pepper chopped)
2 Bay Leaves
Salt & Pepper
Threw everything in the crock pot and will turn it on before I leave for work tomorrow.
Fresh – All Star Salad – I decided to recreate my favourite salad from Fresh Restaurant.
Ingredients:
Kale
Quinoa
Mixed Bean Medley
Sunflower Seeds
Pumpkin Seeds
Hemp Hearts
Tempeh (marinated garlic sesame)
I’m just going to mix up a quick grapeseed oil, apple cider vinegar & lemon juice dressing tomorrow to put on it fresh before eating.
Chicken Meatballs
Ingredients:
Ground Chicken
1/2 Cup of Oats
Handful of Orange Pepper
1 Zucchini (grated)
Spices: Cumin, Oregano, Paprika and Chili
Flank Steak
Veggies: washed green beans, Snap Peas & Kale
